Though all squashes originally came from the Americas, Italians created the zucchini from older American varieties, and Americans welcomed the zucchini as a new Italian variety in the Twentieth Century. As long as no other winter or summer squashes of the genus and species Cucurbita pepo are growing nearby, saving seed from open-pollinated zucchini like Black Beauty is easy. Just let a few zucchinis on different plants grow until they're full-size and hard, and remove and dry the seeds.

But zucchini will cross with any other C. pepo, so if another is near, the seeds probably won't match the parent plant.
