Quiz Answer Key and Fun Facts
1. Is it completely safe to eat rare hamburger if the beef has been irradiated? (treated with radiation to kill bacteria)

Answer: No

Irradiation kills ALMOST all bacteria, insects and mold. However, according to the USDA, it gives no protection against non-bacterial disease such as mad cow disease or hepatitis.
2. Which long term health complication can be caused by food poisoning?

Answer: All of these

According to the USDA, salmonella can cause rheumatoid arthritis. E- Coli can cause kidney disease and campylobacter (found in fin fish) can cause nerve damage.
3. When cooking meat or chicken what is the minimum temperature you should have the oven on for a regular (not slow-cooking) procedure?

Answer: 325 F

At less then 325 F, it takes too long for the meat to reach its internal temperature beyond the USDA's "Danger Zone" of 140 F. If you slow-cook your meat, 225 F would be sufficient.
4. Is it sufficient to marinate fish in lemon juice or vinegar for at least 4 hours to eliminate all harmful bacteria?

Answer: No

Marinades do not kill all bacteria found in fish. Neither does cutting it for sushi.
5. What percent of fruits & vegetables we purchase in the supermarket have pesticide residue?

Answer: 60%

At least 50% of produce tested by the FDA was contaminated AND of those, 50% was contaminated with more than one pesticide.
6. Which is the best way to refrigerate that quart of left over Beef Stew?

Answer: In several small covered containers.

Several small containers are ideal to get leftovers down below the FDA's "Danger Zone" of 40-140 F, as soon as possible.
7. What happens if the date stamped on your milk reaches the date?

Answer: Shouldn't be sold.

Milk can stay fresh up to a week if refrigerated and will not lose nutritional value.
8. Can you get food poisioning from food that is thoroughly cooked & eaten promptly?

Answer: Yes

Not all toxins are guaranteed to be destroyed, even by cooking well.
9. 80% of all reported food poisoning is caused by which of the following bacteria?

Answer: Salmonella

There are many varieties of salmonella. 75% of deaths from contaminated meat (including chicken) are caused by salmonella.
10. Which of these sweeteners can cause a very significant adverse reaction in sufferers of a rare genetic disorder?

Answer: aspartame--"Equal"

Aspartame is one of the safest sweeteners, being composed of two amino acids which occur naturally in proteins and are broken down by the digestive system just like proteins. However, one of these amino acids is phenylalanine which can cause severe damage, in particular to the brain, of sufferers of phenylketonuria, a disease in which this amino acid cannot be broked down and accumulates in the body far beyond normal concentrations. Sufferers must keep a life-long diet low in phenylalanine.
