Zongzi can also be wrapped in other inedible leaves, depending on the fragrance desired. The leaves are never eaten. Wrapped within the leaves, which are then steamed, is rice and an assortment of meats, nuts, beans and even small eggs. They are used to commemorate the death of the first Chinese poet of any fame, Qu Yuan.

The term 'cha-ye-dan' translates as 'tea-leaf egg'. Though it may sound odd, the eggs are wonderfully flavored after having been imbued for an hour or so with the flavors of the other ingredients. The key to good tea eggs is to boil them for about 10 minutes, then crack the shells and return them to boil before allowing them to simmer for at least another hour.

The name 'mu shu' refers to the wood ear mushrooms and day lily flower petals that are sometimes used to create this popular dish.

Kung Pao Chicken (aka Gong Pao Ji Ding, in Mandarin) is a delicious stir-fry recipe which requires peanuts and chili peppers (cashews are a less desirable alternative to peanuts). Several other ingredients are optional, and the recipe is sometimes used with shrimp (Kung Pao Shrimp).

Jiaozi are stuffed with anything from beef to pork to a variety of vegetables and then are boiled. Following this, they can be eaten either as a soup or by themselves, dipped in a variety of sauces. My favorite is a mixture of Chinese dark vinegar and soy sauce...yum!

'Dim sum' (or 'dian xin' in Mandarin) roughly translates as 'small (or 'dot') hearts'. Dim sum snacks can include 'cha siu bao', 'ji jiao' (chicken feet), spring rolls and many other exciting little delectables. I highly recommend having a try at your local 'dim sum' restaurant, but beware...it can be quite greasy!

As a general rule, any dish from Sichuan (or Hunan) will be quite spicy, so beware! Not only is minced chili prescribed for this dish, but also crushed peppercorns and hot bean paste. If you can handle your hot, spicy dishes...you may want to give this a try, it may give you a new opinion on tofu (if you aren't already a lover of the stuff)!

Actually, the Chinese can have quite a sweet tooth. Not only are there a variety of cakes and confections that are enjoyed in Chinese cuisine, they also love fresh fruit, often mixed with various other ingredients. The Chinese also make wonderful rice and bean puddings. On top of this, there are a number of popular Chinese candy varieties, and candied, dried fruit is a very common sweet snack.

Answer: Rhino horn

Within the various Chinese cuisines, from north to south, there is quite a lot of variety. Over the years, some very interesting and rare items have been added as regular parts of the menu, including: jellyfish, bird's 'nest' (really the saliva of swallows), sea cucumber, snake, shark's fin, etc. etc.

The variety is surprising, and only the most daring of Westerners is willing to try 'everything'. So far as I know, however, the Chinese have not found a way to cook up rhino horns...though supposedly the powdered variety of this item is considered an aphrodisiac.

Don't worry, the chicken isn't really inebriated. However, you might be after eating this dish. The recipe calls for a chicken to be boiled or steamed, then marinated overnight with a rice wine mixture. It is served cold, the wine's flavor having penetrated the meat and the alcohol going right to your head!
