Calf and bull testicles are also called prairie oysters and considered a delicacy.

I have never tried the hangover cure - no matter how long a night on FT. A raw egg, Worcestershire, vinegar and salt & pepper, swallow in one shot - hangover cured.

Marshmallow cream was invented in Massachusetts over 100 years ago by Archibald Query. It is made with whipped sugar, dehydrated egg whites, corn syrup and "secret flavoring". 60% of the sales of "Fluff" come in the holiday months (October-December) as it is used to bake another iconic product - Never Fail Fudge!
Although it has long been on the list to be named "Massachusetts State Sandwich" it hasn't made it yet. It's definitely an acquired taste, but one that a lot of kids (and adults) love.

Cholera pie is a delicious potato and fruit tart developed in a remote Swiss mountain valley during an 1836 cholera epidemic. The locals used what they had in their larders to avoid going into the larger cities for provisions. The double crusted pie, made with potatoes, onions, bacon, apples, pears and a soft cheese, is still served in the Goms valley today.

Ah, the Adelaide pie floater! Created in the 19th century, it consisted of an inverted meat pie in a bowl of thick pea soup, garnished with tomato (sometimes Worcestershire) sauce. Back in the 50s and 60s this was eaten on the spot in the chilly night air, as the china bowls had to be returned. The Adelaide Pie Cart was an icon, and one of the rites of passage to adulthood.

Unless you live in Southeastern MA or Rhode Island, you might not have heard of this. The Chow Mein sandwich was created in the 1930s in Fall River, Massachusetts, as a low cost meal in this economically depressed area. It is a brown gravy based mix of crisp Chow Mein noodles, meat/chicken or seafood, and vegetables served on a hamburger bun, either "strained" (without the meat and veg) or "unstrained". Chef Emeril Lagasse has featured it on his cooking show (he's a Fall River native) and remembers it fondly.

The balti is served in the dish it is cooked in and mopped up with a naan bread. No cutlery allowed! Traditional curries are cooked over a long period, but a balti is heated quickly, much like a stir fry.

Ah, sticky date pudding - the ultimate comfort food on a cold evening. I remember making it the traditional way in a pot that had to be topped up with boiling water - you didn't dare leave it for long. Nowadays I mix the dates into the batter, and bake it in the oven. Just as moist, and much easier. Serve with whipped cream (and ice-cream, if you're feeling decadent)
