Each raspberry contains on average 80-100 drupelets. When the fruit is partially ripe, you will see that some drupelets are paler than others. Make sure the fruit is uniformly ripe and fit to burst before popping it into your mouth to get the full flavour as each drupelet explodes onto the palate.

The Marshmallow plant (Althaea officinalis) grows well in damp and moist areas throughout the world, but more commonly in Africa and Europe. The plant name derives from the Greek altho (to cure) and malake (soft). The plant root is "mucilaginous", meaning gummy or jelly-like, and it was this that was used by the Egyptians to make confectionary. The treat we use for ice cream toppings today is completely different with corn syrup, sugar and gelatine as the main ingredients.
