The origins of vichyssoise are not entirely clear. It is usually referred to as being French in origin and is named after the town of Vichy in France. However, it seems to have been invented by French chef Louis Diat at the Ritz Carlton Hotel in New York City. Famous French chef Julia Child once called vichyssoise an American dish in one of her cookbooks.

Vichyssoise is traditionally made by pureeing leeks and potatoes and mixing that with chicken stock. It can be served hot, but doing so is a culinary faux pas in some places. The inspiration for vichyssoise, however, may have been a hot soup with similar ingredients invented by another French chef named Jules Gouffe.
