Quiz Answer Key and Fun Facts
1. When making strawberry shortcake, it is important to put sugar on the strawberries and let them sit for about an hour, allowing them to surrender their juices. What is this process called?

Answer: Maceration

Maceration is defined as the "softening or breaking into pieces using a liquid" when preparing food. Soft fruits, such as strawberries and raspberries, however, release their juices when sprinkled with a bit of sugar. This helps to bring out the flavor of the fruit, while making it easier to chew and digest.

In the case of strawberry shortcake, the juices soak the cake and cream, giving an extra boost of strawberry flavor. Yummy!
2. Which of the following is typically added to a healthy strawberry smoothie to make a creamy base?

Answer: Banana

The soft, creamy texture of bananas make them the perfect ingredient for a non-dairy smoothie! Some sources claim that they are also the perfect ingredient for a green smoothie, as they cover up the taste of healthy ingredients, such as spinach. If your bananas are overripe, put them in the freezer, and use them with strawberries to make a vegan raw ice cream. Yummy! Oh - and back to the original question - the flavor of bananas and strawberries complement each other very well.
3. Strawberry and rhubarb pie, which I remember enjoying at the church ice cream social, was just a slice of heaven! What is the term for the typical crust used that employs strips of pie dough set in a woven pattern?

Answer: Lattice Top

Who cares what the crust looks like as long as there is plenty of it and it is good? Well, making beautiful pies is a matter of honor among cooks. The crust can be used to make stars, maple leafs, hearts, and a large variety of other designs. As in the case of the strawberry rhubarb pie, the lattice top allows juices to bubble out a bit and caramelize - the perfect blend of sweet and tart.
4. Traditionally served at the annual cricket match between Eton College and Harrow School, the eton mess is made with strawberries, cream, and pieces of which other ingredient?

Answer: Meringue

Dating back to the nineteenth century, an eton mess may be made with a variety of ingredients, but strawberries are regarded as being the traditional choice. The meringue was added to the mix later, but is considered a key ingredient today. Why is it called a mess? It may be due to the appearance of the dessert on the plate, or a reference to several foods eaten together.
5. There is nothing better than homemade strawberry jam on my morning toast! What is the difference between jam and jelly?

Answer: Jam is made from crushed fruit, while jelly is made from the juice.

I didn't realize there are so many different types of fruit spread. In addition to jelly, which uses juice, and jam, which uses small pieces of the fruit, there are also preserves, which use larger pieces of fruit than jam. There are also conserves, which is jam made with more than one type of fruit.

The other ingredients (sugar and pectin) that are used to make the spreads is basically the same, although pectin may not be necessary in jam because the pieces of fruit already thicken the mixture.
6. When I was young my mother would buy ice cream that featured a layer each of chocolate, vanilla, and strawberry in the same container. Of course, I always ate the strawberry first since it was my favorite! What is this type of ice cream called?

Answer: Neapolitan

Also called harlequin ice cream, it is believed that Neapolitan ice cream had its origins in Naples, Italy, and was brought to the United States by Italian immigrants. Spumoni, which is made in the same manner, was introduced to the U.S. in the 1870's; it is typically made with cherry, pistachio, chocolate or vanilla, and different nuts and/or fruits.

The three distinct layers were made to resemble the Italian flag! It is believed that Neapolitan was created because chocolate, vanilla, and strawberry were the most popular flavors in the United States at the time.
7. A strawberry tiramisu is made with lady fingers, mascarpone cheese, sugar, and eggs. What are the lady fingers commonly dipped or soaked in before being placed in the dish?

Answer: Coffee

From Italian, the word tiramisu means ""pick me up", "cheer me up", or "wake me up". Indeed, this scrumptious dessert can do all three! The lady fingers are dipped in coffee, but rum, wine, or a coffee-flavored liqueur may also be used. Some recipes may call for a strawberry "juice" rather than coffee, however, experts agree that coffee is an ingredient that makes a tiramisu a tiramisu. Using the juice rather than coffee makes more of a strawberry trifle.

While a traditional tiramisu may just be sprinkled with cocoa powder on the top, using strawberries adds an extra layer of zingy flavor that just can't be beat!
8. According to legend, which artistically-inclined Roman emperor invented sorbet?

Answer: Nero

Made from sweetened water and fruit juice, a sorbet is neither Italian ice or sherbet. While Italian ice is made by freezing the ingredients while mixing them, much like ice cream, sorbet is made by freezing the ingredients after mixing; sherbet contains dairy products, usually milk or cream, in its ingredients, and sorbet does not. One of the legends regarding the invention of sorbet is that is was an innovation of the Roman Emperor, Nero. Runners would pass buckets of snow from the mountains, and upon arrival at his palace, the snow would be mixed with honey and wine.
9. Strawberry trifle is a delicious dish that can be served in a variety of ways. From which earlier dessert did the trifle evolve?

Answer: Fool

An English dessert, the fool was made by adding pureed fruit, typically gooseberries, to sweet custard. It was first mentioned in 1598 as "foole"; it is uncertain why that name was used, however, the term was synonymous with trifle. Although any fruit can be used to make a trifle, a combination of strawberries, blueberries, and raspberries make a mighty tasty dessert.

As a side note, try adding lemon curd next time as one of your layers! Magnificent!
10. Strawberries and cream are famously served at the oldest tennis tournament in the world. Which tournament is synonymous with this delicious dessert?

Answer: Wimbledon

Strawberries and cream have been enjoyed in England for quite some time; credited to Thomas Wolsey, it is believed that the first strawberries and cream were served at a banquet in 1509. According to Johnny Perkins, head of Public Relations of the All England Club in a 2015 article, the dish was probably served because strawberries were in season at the time and they were "fashionable" to eat in Victorian England, popular at afternoon tea.

He said the strawberries are freshly picked the morning of the day they are served, and quickly processed, sorted into cartons of ten each.

In 2014, 142,000 servings were consumed; interestingly, the cream and sugar are optional. A bit of variation was discovered when searching for "official recipes".

While some use only strawberries and cream, others may add other ingredients, such as sugar, vanilla, or mint.
