There is some dispute over this, because conflicting years are inferred in different books. I posed the question to Herself (Diana Gabaldon), and her reply was that Jamie's birth year is 1721, despite the discrepancies. Also, in book five "The Fiery Cross," Jamie celebrates his 50th birthday on May 1, 1771.
2. What name did Jamie go by when he was a printer in Edinburgh?

Answer: Alexander Malcolm

From Book III: "Voyager". Alexander Malcolm are two of Jamie's middle names. (James Alexander Malcolm MacKenzie Fraser; as if you had forgotten!)

Book I: "Outlander" ("Cross Stitch"). Jamie thought Jonathan had sired his nephew, but it turned out to be Jenny's husband, Ian.

Since we know that he died in the Battle of Culloden (April 16th, 1746), it is easy to figure out that Randall died five months short of his 41st birthday.
