Stefan is the only vampire that Mercy trusts even a little. She is a mechanic and keeps his Mystery Machine van running. She also bought Stefan a large stuffed toy Scooby to sit in the passenger seat :-D
The "Mercy Thompson" books are by Patricia Briggs, and the one in which Stefan features most is called "Blood Bound" and was first published in 2007.
