Answer: her grandmother

 Lafayette was killed in the second book, "Living Dead in Dallas." The other two characters are still alive as of "Club Dead."
2. Who is the bartender at Fangtasia?

Answer: Chow

 Chow becomes the new bartender and business partner at Fangtasia after the old one is staked for attacking Sookie. The bar that Sookie works at is called Merlotte's.

 He kidnaps Bill and tortures him in an attempt to steal the vampire directory that has been compiled for the Queen of Louisiana.

However, because of the circumstances surrounding his hospital visit, he came back wrong. Now he can only follow simple orders and it is not smart to call him by his real name.

Answer: a collie

 Shapeshifters become the last animal they laid eyes on before their change.

 Steve Newlin is said to be the leader of the Fellowship of the Sun in "Living Dead in Dallas." In "Club Dead", Sookie refers to him as a "former" leader and adds the first initial. Francie Polk is a member of the Fellowship, Tolliver Humphries was a friend of Bill's who was killed in the Civil War, and Preston Child was the co-author of the books "Relic" and "Reliquary."

 She was most excited when Bill agreed to speak at one of their meetings.

My mind instantly turned to Salazar Slytherin, one of the four founders of Hogwarts. There is a goblin in the series, but he doesn't appear until the third book.
