Mama Maria's was a restaurant attached to a pizzeria. The shabby restaurant tried to live on their 1990s success. During service, Ramsay noticed a vegetarian dish with pork bones in the sauce and a customer getting sick from a bad lobster. Mama Maria's had a large quantity of frozen food in stock.

After tasting a "soup of the day" made earlier in the week, he taped over the "grille" in the name. During the service, the head chef left the kitchen and Ramsay shut down the restaurant after tasting a sour gravy and noticing raw food next to cooked food.

He relaunched the restaurant as a gastropub with a new chef.

During service, he found meat and fish cooked in the same pan, oysters kept at room temperature, and mayonnaise that expired three years before. Chappy's closed in June 2013 after the state seized the restaurant for nonpayment of taxes.
