Father Mulcahy came from an Irish Catholic background. In fact, in one early episode Henry Blake refers to Father Mulcahy has 'Irish'. His rosary beads and constant cross wielding ought to have given the answer to this question away!

Answer: William Christopher

In the 1970 film version, the Father Mulcahy character was played by Rene Auberjonois, who you may recognize from the later TV series 'Benson' and 'Star Trek: Deep Space Nine'. Before joining the 'M*A*S*H' cast, Christopher appeared in such films as 'The Fortune Cookie' and 'With Six You Get Eggroll' (apparently he liked Chinese food).
