Answer: DeForest Kelley

DeForest Kelley had a quick cameo reprising his iconic role as Leonard McCoy, however he was ranked as an Admiral. When he was escorted to the shuttle by Data, he stated to him "I don't see any points on your ears, boy... but you sound like a Vulcan!" Data replied "No, sir. I am an android." McCoy turned away and grumbled to himself "Almost as bad."
2. Which crewmember's interests included combat simulations, poetry reading, and... prune juice?

Answer: Worf

Klingons seem to be an odd bunch... They lived for war and honor, but engaged in poetry reading after they "claimed" their mate. In one episode, Guinan discovered he liked prune juice.

Answer: USS Yamato

The Yamato was also a Galaxy-class starship considered to be the Enterprise's sister ship, and was destroyed during the season two episode "Contagion". The other starships were either mentioned or featured in an episode in the series.

Spiner portrayed Data, the second officer of the ship. He was unique in that he was an android, yet wished to be human. In multiple episodes the actor also portrayed Data's evil twin brother, Lore. Later in the series Spiner would also portray the creator of both Data and Lore, Dr. Noonian Soong.

In the "Star Trek: Nemesis" movie, Spiner portrayed B4, a prototype, less-developed brother of Data. During the TV series "Enterprise" Spiner portrayed Arik Soong, the grandfather of Noonian Soong.

Eventually Diana Muldaur asked to leave due to not wanting to commit to the rigours of being a main character on a primetime show.

The producers reached out to McFadden, who was also coaxed back by Patrick Stewart.

Leonard Nimoy portrayed Spock during a two-part episode revolving around the unification of the Vulcans and Romulans. Mark Lenard reprised his Sarek role (Spock's father) whom Picard helps during a mission. James Doohan portrayed Scotty during an episode involving a Dyson sphere and finding Scotty who's been surviving in a transporter beam for 70+ years.

In an episode where the entire crew de-evolved to primitive creatures he ended up having the condition that caused it named after him: Barclay's Proto-morphosis Syndrome.
