What is a "scab"? What does it do?

I've never heard the term scab applied to american gridiron football before...

The only scab I know of is one who crosses the picket line during a player strike and plays anyway.

Like you Diehard - the term Scab is someone who breaks a strike(ie works when others refuse to) here in the UK as well.
