I can only think of four:

4. A Knight's Tale (It's just fun to listen to)
3. Save the Last Dance (Awesome dance music)
2. Lord of the Rings: FOTR, TTT, and ROTK (The music is beautiful)
1. Buffy the Vampire Slayer's Once More With Feeling (I could listen to this 100 times a day. So call me obsessed. )

Another great soundtrack is from the original film version of "Shaft". Isaac Hayes and the Bar Kays, what a great combination. I also like (and highly recommend) the soundtrack from "Wattstax" as well as any compilation featuring music from that film. Excellent soul music from a seemingly forgotten and underrated music documentary.
