When you clean out your cookie file, can you designate a few you'd like to keep (to help remember infrequently-used passwords) or is it an all-or-none deletion choice?

You can keep any cookie you want if you don't delete them automatically through the internet options menu. Just go to the Cookies folder (probably in the Temporary Internet Files folder) and delete the files manually.
