Erm if we're talking guitar solos then there are many which i find both amazing and fascinating.

Michael Angelo (Master of Shredding a guitar) in No Boundaries. Its basically one big 4 minute solo, were he shreds his guitar to pieces.

Most solos by Alexi Laiho of Children of Bodom are pretty awesome too, in particular in Mask of Sanity, Follow the Reaper and his two in Kissing the Shadows.

For Keyboard solo's, id say Janne Warmen (also from Children of Bodom), in Hatebreeder, and Kissing the Shadows.

These guys really know how to do an impressive solo!

I actually prefer Gene Krupa's solo with the Benny Goodman Orchestra.

Anything jazz related usually is accompanied by a pretty darn good solo.

I'd check out the GRP All-Star Band
when the boys do John Coltrane's 'Blue Train'
the first tenor sax solo is just sick.

tenor sax duel from 'Cottontail' off the Eddie Reed Big Band album 'Hollywood Jump'

just too many to list
I could go through my hundreds of jazz recordings and keep digging up gems

In Black Sabbath's, 'NIB'. That's an awesome guitar solo!
