I've just been watching "Duel" (remember that old movie with the truck chasing the car?) and was wondering why there were about 6 number plates on the truck ... would a truck be allowed to be registeresd in more than one state in the US?

Yes. Each state has it's own requirements for truck traffic. And they each have a port of entry for trucks to be weighed and the driver's cargo manifest examined.
The driver's log book which has entries for hours on the road is also looked at. They also collect road fees at the port of entry.
