Does anybody happen to know what the name of the episode is where Walker and CD take Trivette snipe hunting? It's funny because I had that same trick played on me the first time I went to Wife's Aunt's in West Virginia (minus the "cookaroo, cookaroo, biddy biddy boo" part.

Have you tried using Google? When I'm trying to find out episode information, I can usually find a fairly complete episode guide through Google.

I know they also had a snipe hunting episode on Cheers - I can't remember if it was done to Frasier or Cliff.... I'd never heard of such a thing until then, I don't know what it's about either. Can someone enlighten me?

If memory serves, it was done to Frasier, although I think some reference was made to it having been done to Cliff.
The guys take some non-outdoor type 'snipe' hunting (convincing him that this animal does exist) as a 'male bonding experience'.
I think the way it played with Frasier, was that they left Frasier holding some bag, in which he was supposed to capture the snipe that the other guys chased into the clearing by beating the bush with big sticks or something like that. I think they also left him some silly call to do to lure the snipe. Then they left him there, and went back to the bar.
