Since you brought up John Mayer, Stu, I'll add "Slow Dancing in a Burning Room". It's a got a lot more bluesy/jazz undertones to it and that 'atmosphere' is much sexier I think.

I think that's Strokin'? - I stroke it to the east, and I stroke to the west, And I stroke it to the woman that I love the best, I be strokin'. I couldn't remember the artist, so I googled, it's Clarence Carter.

Two songs that make me melt everytime I hear them is You Can Keep Your Hat On, Joe Cocker (mentioned before) and Where Angels Fear to Tread, Bryan Adams. Mmm mmm mmm. I never tire of listening to either of those.
