Gee, there aren't any lamb dishes yet. I thought there would be. Here is one to start it off:

Lamb and Apricot parcels

Ingredients:
  • 100g dried apricots, finely chopped
  • 500g minced lamb
  • 1/2 cup apricot conserve
  • 1/2 cup herb stuffing mix
  • 3 sheets ready rolled puff pastry
  • 1 egg, lightly beaten.


Method:
  • Preheat oven to 180 degrees celcius.
  • Mix apricots, lamb, conserve and stuffing mix in a bowl. Leave for 20 minutes.
  • Shape mixture into 6 flat, square patties, about 10cm by 10cm.
  • Cut pastry sheets in half to make 6 pieces overall. Put a pattie on the end of each piece.
  • Brush pastry with beaten egg.
  • Fold pastry over the pattie. Press edges together. Trim edges.
  • Cut 3 slits in the top of each parcel with a sharp knife.
  • Brush the tops and bottoms with egg, Bake for 30 minutes until crisp and golden.


I have tried them many a time, and they are delicious!
