A great way to use up left over potatoes.

Cold boiled potatoes ( diced )
Finely chopped onion
Two fresh eggs
Butter for frying

Melt the gutter in a frying pan, add the onion and cook until just going soft. Add the diced potatoes and continue to cook until they start to brown. Crack the eggs over the top and mix until the eggs are cooked.
Serve immediately.
For non vegetarians chopped bacon can be added after the onion has been cooking for a few minutes.

That's funny... my Oma & Opa had a similar idea, but much more general. We call it a "Feder Mishmash" (their last name was Feder). It was used to clean out the fridge, or just as a quick and easy meal.

Possible ingredients:
-pasta (cooked already, but still plain)
-veggies (zucchini, tomatoes, mushroom, whatever)
-cheese
-onion
-garlic

Butter/spray the pan, cook any veggies that need to be cooked (until slightly soft), including garlic & onions.
Beat the eggs with cheese (if you want cheese) and seasonings (salt and pepper, maybe some garlic powder). Pour into the pan with the veggies. Cook until the eggs are done, stirring frequently. Taste and season to your liking.

This dish is simple enough for both my father and 13-year-old brother to make! It's about as close to "soul food" I've ever made

Here's a good dish to bring to a vegan/ vegetarian potluck... that's what I us it for

Ingredients:
1 Onion (cut into thin rings)
1 Carrot, chopped finely
1/2 Tomato, chopped finely
1 cup lentils (green)
1 Tbsp curry powder (or to taste)
1 tsp turmeric
1 pinch anise seed
Salt/ pepper to taste

Process:
- Rinse lentils, and in a medium saucepan, boil until soft and all water is gone. I like to use 1 1/2 cups of water, and add more if I need to. You would use less if you are an overnight lentil-soaker (I never can plan that far in advance...)
- While lentils are boiling add curry, turmeric, and anise.
- In a separate pan/ skillet/ wok, brown onions, sautee carrot with a little olive oil, salt and curry powder. At the very end, add tomato
- Once lentils are soft and there is no more liquid, add sauteed veggies to lentils in saucepan.
- Season with salt and pepper to taste
- Enjoy!

Forget the potluck---I think I'll try that next time my relatives come over (they eat as much as a party anyway). I'm the only veggie, but they don't seem to mind what the food is, as long as it has taste, and that looks plenty tasty!
