Cheesey potatoes
Not so much a recipe as two, both really simple and quick, both delicious. Excellent to eat as a snack or as part of a meal, good with ham.
Cheesey mash potato
I normally make this with leftover mashed potatoes.
Add a generous amount of grated cheese, I normally use a Cheddar, and mix it in well. Put into a heat resistant dish so it is not too thick, I normally make it about 6cms deep. Sprinkle liberally with more grated cheese then place under a slow grill to warm through and then toast the cheese topping.
Cheesey jacket potoatoes
When cooking backed potatoes in their jackets I normally just cook twice the number I need and use them the next day for this.
Cut the potatoes in half and carefully scoop out the potatoes trying not to damage the skins. Season well and add a little butter and lots of grated cheese, Cheddar is good, then mix thoroughly then spoon the mixture back into the skins pressing down so as to make the tops flat. Sprinkle more grated cheese on the top and place under a grill to warm and then toast the cheese topping.
