I thought I'd add a few recipes from my childhood, mostly the experiments of my mother cooking on a budget, and since no one had posted in the egg dishes yet, I figured I had the perfect recipe!
When we were kids, for about 2 years, we were vegetarians, mostly because meat is expensive, but also for health reasons at the time. My mom came up with all sorts of inventive ways to feed us. One such was a casserole version of a traditional Mexican dish, Chile Rellenos. Chile Rellenos is a mild green pepper stuffed with cheese and spices, battered in cornmeal and fried. They are delicious. This is a kid-friendly, breakfast, lunch or dinner meal that is filling and cheap, and almost as tasty:
Ingredients:
Two 7oz cans of whole green chiles
1/2 Lbs Monterey jack cheese
5 Eggs
6 Tblsp Flour
2/3 cup Milk
3/4 tsp Baking powder
1/4 cup Sunflower seeds
1 cup Shredded cheddar cheese
Sliced ripe olives
Drain, clean and dry the chiles. Slice open and stuff with a stick of monterey jack cheese. Arrange to cover the bottom of a 2 qt baking dish.
Beat eggs until foamy. Add milk, flour and baking powder and beat until fairly smooth. Pour egg mixture over chiles, making sure all surfaces of chiles are moistened.
Sprinkle cheddar and sunflower seeds over the top of the batter and bake at 375 F, uncovered, for about 30 minutes or until the egg mixture is set.
Garnish with olives. Also good served with salsa!
