I love cayenne on my pizza, and curries, chillies, all that kind of food. If my mouth gets uncomfortable my solution is simple and, I find, quite pleasant.

I have a small shot glass of *olive oil* handy. Most spicy chemicals easily dissolve into oil, much more so than in water. Water is hardly effective at all. I just take a sip or two, let the oil flow all around the mouth for a few seconds till the hot sensation is pretty much gone. Then I just swallow the oil. Use extra virgin olive oil, but really any oil will do.. canola and corn oil have a milder, blander flavour.

I am not sure I could bring myself to drink neat oil!
I usually serve a raita or even just a good plain yoghurt with my curries. It helps cool the mouth down and doesn't take away the flavour.

I am afraid that I've really had to curtail my spice consumption the last year. The heartburn was so ghastly that I could not afford to have it.

Sri Lankans claimed that the only thing that really worked for them was coconut served in bowls on the table. I eat it with curry when I can risk it.

I think there's no hope for you if you eat in that Sumatran restaurant near the harbor in Sydney though...no hope. I thought my breathing apparatus would melt. I wonder if it's still there after twenty five years or if someone torched it?

A Mexican friend told me that the best thing to drink is milk. Pasteurised whole milk has oil or fat droplets suspended in it so I would assume that's why it has a good effect, and I would imagine that it would be more palatable than drinking olive oil.

I've always drank milk or had a slice of bread nearby. Both always work.
