I can tell you one thing NOT to do.... When I was about 12 I had a pet rat. I caught a mouse, and as I had only the one cage, I put it in with the rat. Bad idea for Speedy, the mouse. Did you know rats kill mice? Oh, the squeeking!  Anyway, I suppose you could call the pet store and see what they feed the mice, but I think veronikka's right, and they will eat about anything.

Don't give it cheese, or you will have a very smelly mouse - seriously! Bit of cereal, bit of apple, perhaps a nut. Anything like that should be fine. You can domesticate them with work, if you want to.

I cannot believe that I am reading this...this cruel post. 'Stuff it with pepper and kernals etc'. This merely torments the mouse. Let it know at least, what to expect. Years ago, whilst dozing in a small trench, I was awoken by a scurrying and a hustling, (I know, sounds like a 'Blues' intro). It was early morning and, frankly, it scared the life outta me. SOoo, down came my rifle butt...and there was breakfast. Not a lot of blood in a mouse, so it's really quite easy to pick the flesh from its little ribs. 'Course, 'ad we been Americans, it would have been served with a sauce, Coke and very definitely chilled.

I don't know about recipes but if I caught a wild mouse, I'd probably use it for Legs food.

I've kept pet mice.. they've been bred for docility. I'd expect wild mice would be far more likely to bite and try to escape, not to mention the burden of parasites they're carrying.
We had an invasion of field mice on a kibbutz where I was volunteering and the scratching noises were driving my room-mate nuts so we got a humane trap and baited it with cheese. NOT interested. As a joke I put in a little piece of milk chocolate. We caught one within minutes! We sacrificed more chocolate and caught *four in a row* .. and yes they weren't the same ones, won't go into details but we were sure. I've asked around since and others have reported success with chocolate.

trojan11, your post reminds me of a story from my best mate. He was in a snowhole in Norway and woke up to find a lemming had eaten his rations. So he dispatched and ate the lemming.

ugh  as much as I try to keep my house clean those little ^&*%$ keep coming in ... to keep cool in summer and warm in winter we think. They are more in the loungeroom than the kitchen strangely enough. Glad you removed it - filty little things they are! Do those electronic mouse repeller really work?

Yes, Copago, they do. But not the basic one tone effort. I forget the technical term but you need one, or two, that sends the sound waves along the electric wiring system in your home as well as the directional sound wave. Wherever they're hiding, under the floorboards etc, they soon get so uncomfortable that they leave. We had a mouse problem, tried the basic plug type and the wretched things just kept out of its way. Went for the more upmarket type of plug in and we soon heard them scurrying around between the floorboards, etc and within 48 hours they were gone.

Sorry, Trojan, for not replying sooner  but thanks for the info. I must look into it a tad more. There's often little people around the house so bait isn't ideal, plus they usually die where you can't reach 'em .. the mice that is and not the little people. And trapping can be a pain in the bum so the electronic thinamijigs could solve a few problems.
