Please try to submit to the correct category. It can affect the initial impression that your submission makes.

For example, in History we get quite a number of quizzes on U.K. monarchs. These should be submitted to People and put in the appropriate sub-category. If someone - especially a new quiz author who has just played 100 quizzes or so - submits a quiz on Elizabeth I to History it tends to create the impression that he/she:

1. Has not read the category guidelines for History or People.
2. Is blissfully unaware that he/she is submitting a quiz that belongs in a restricted category.
3. Has probably not played many (or any) of the existing quizzes on the topic.

Usually such submissions consist mainly of questions that have already been asked several times before.

Mind you, I sometimes wonder if editors always get it right when they decide to move a quiz to a different sub-category. My "Curse of the Ninth Symphony" was moved to the "Beethoven" sub-category, presumably because the introduction starts with the words "Beethoven completed nine symphonies before his death."

However, it then goes on to explain "Since then, some composers have been superstitious about reaching this total, and a surprising number have in fact failed to make it to number ten. This quiz tests your knowledge of some of them." In fact, none of the questions are actually about Beethoven at all, and it is a source of occasional wonderment to me that I have never had a correction notice pointing this out!

But I must say, that is an isolated incident, and I think the editors do a great job, and no doubt have to put up with no end of difficult customers who fail to appreciate just how hard it is.

Also behind the scenes, quizzes change subcats because new subcats are created due to a few of that certain quiz exist. New subcats are created all the time. At any rate, with the editors seeing every subcat and quiz possible, they would be the ones to best fit a quiz. :-)

Someone mentioned (way back in an earlier answer) that there is a way to find out how long the waiting time is in a particular category... Can someone please tell me how to do this?

If you go to "Old Profile Page" under your Me menu, one of the links on that page says "Check Quiz Queue Status" or something similar to that, and it takes you to an approximate list of wait times.

Or click on "create a quiz", then "quiz creation guidelines", and scroll down that page, there's a section on waiting times.

My quizzes tend to percolate on the back burner for lengthy periods, then all of a sudden I find three or four coming together within a few days. It is indeed frustrating to only be able to submit one at a time, but the waiting period (when you check every hour to see if there's any information yet) has been mercifully short for most recent quizzes. And having it accepted is only the first stage - new-born quizzes need lots of loving attention. Since the period of hovering anxiously over a new quiz to see how it is going, and deciding whether it seems to need tweaking, is very labor-intensive, it is really just as well not to have too many to monitor at once!
