According to the Collins Dictionary, it is a warning that just because one good thing happened don't assume more good things will follow.

The phrase might have its origin from "The Young Man and the Swallow" by Aesop.

The story suggests that one day of happiness does not mean a person will be entirely happy. It is nice, but things could get better...or worse. Since a swallow is a migratory bird, seeing one could be the first sign of spring.
