HB, you're right that lettuce is processed in the sense that it is washed and perhaps chopped or shredded; but it is always fresh. Never is it processed in the sense that it is cooked, frozen, or otherwise preserved. Heck, I don't even know of any other way lettuce can be used, besides fresh.
