Mix, so glad to hear from you! We are in a cycle of cold, never-ending rain, so I'm using it as an "excuse" to prepare as much "comfort food" as possible before spring and summer get here and we switch to lighter fare. As I mentioned in my earlier post, I will not use boxed mac and cheese (WAY too much salt, and it tastes peculiar). This basic recipe comes from "Threadgill's: The Cookbook," but I fix it two different ways, depending on whether you want to go Mexican or Italian. If you want it plain, just follow the basic recipe. Here goes: Mexican Version 1 1/2 cups milk 1 lb (8 oz.) Velveeta (I use Carta Blanco Velveeta) I hope you can get it over there. Cut into 1/4 inch cubes. 4-5 Tablespoons butter 1 tsp. Paprika (I like to use Smoked Paprika) 1/2 tsp. Cayenne pepper (If you are going Mexican) 1 tsp. white pepper 4 ounces mild cheddar cheese, shredded 4 ounces 4 cheese Mexican blend cheeses 8 oz. can Ro-Tel tomatoes (I only use 1/2 of a can because these can pack a punch) 8 oz. macaroni (I use elbow mac or sometimes penne, depending on what's in the cupboard) Plain or Mexican flavored bread crumbs You can do this in a double boiler, but if you have a crockpot, it's a lot easier! It only takes about 1/2 hour for everything to melt and you don't have to stand over it and stir. Add milk, cheeses, butter and spices. Cover and cook on low till melted. Meanwhile, cook your pasta and drain. When both are done, layer pasta and cheese in a lightly greased pyrex baking dish and top with a layer of bread crumbs. Cook 15 to 20 minutes in a 350 degree oven. Pig out! Italian Version: Do exactly the same thing EXCEPT: Take out the Cayenne pepper, Rotel tomatoes and Mexican cheese. Instead, add plain Velveeta, your choice of Italian cheeses, shredded, 1 T. Italian spice blend, and top with Italian flavored bread crumbs. I generally use penne pasta with this version. Plain Version: Prepare as above EXCEPT: the only seasonings you will add will be the paprika and the white pepper. Top with plain bread crumbs. Hope you enjoy this! Thanks Anne, I've not heard of Velveeta so I'm not sure I can get it here. Is there any substitute? I don't think I've ever had chicken and dumplings. I've had chicken and balls of stuffing. It's interesting to hear about different cuisine. Reply #24. Feb 21 19, 2:34 AM |

Postie and Mixy: I haven't forgotten about either of you! I just posted on another thread and my left hand isn't doing so well due to peripheral neuropathy. I'll get back to you tomorrow with the chicken and dumpling recipe, and I did manage to find a substitute for Velveeta cheese. I'm going to also provide you a substitute for Bisquick baking mix, just in case you don't get it over there, Mixy, for the chicken and dumpling recipe. I like Peanut Butter, Tomato, and Bacon sandwiches. I cook once or twice a year a giant pot of chicken and rice, my own recipe. It takes 18 hours to cook it. It's sooooooooo good, and I'm not just saying. I've made some awful stuff in the past but this is soooooooo good. I've been experimenting with fettuccine.
