 Donkey Kong Country 2
You can turn into the animals in specific levels. In the second, third, and N64 games, you turn into the animals as well as ride them.

Arctic Abyss. The Lost World levels are said to be the most difficult levels in the game.
Clapper. He also freezes the water in Clapper's Cavern, found later in the game.
