Quiz Answer Key and Fun Facts
1. This Christmas gift suits the occasion by its color. I am going to make freezer jam. It is not George Washington's birthday, but legend has it that he chopped down this type of fruit tree. Which fruit did I choose for my freezer jam?

Answer: Cherries

Cherry Freezer Jam with its pretty red color will make a tasty and colorful gift at Christmas time. For this recipe, I will use bing cherries, some raspberries, lime juice, sugar and water. To make a freezer jam I will use no cook freezer pectin which can be found in my local supermarket or grocery store. No cook freezer pectin comes in 1.5 ounce packets.
2. My friend is originally from Foggia, Italy and loves olives. I want to put my own specially jarred and seasoned olives into the Christmas gift basket I am making for her. However my friend is concerned about nutrition. What is the nutritional value of an olive?

Answer: All of these

Because olives are easy to digest, low in cholesterol, and high in Vitamin E, they are a good food to choose for my friend's gift. I will season the olives with different herbs, put them in a fancy jar, and keep them in the refrigerator. When it is time to make a Christmas visit to my friend, I will place the jar in the christmas gift basket.
This will be a tasty, healthy, and safely preserved home made gift.
3. My brother, Seth and his family are making their Christmas visit in the evening. We will have coffee and dessert. Each year we have a little game to find an ordinary recipe that calls for a not so ordinary ingredient to it. I will serve "brownies" this year, but my secret ingredient is one that is usually found with lamb, chicken, pork, or pasta recipes. Can you guess the secret ingredient I will add to the brownie batter?

Answer: Mint Pesto

Now I found this hard to believe, mint pesto in brownies? To my surprise as I scoured the Internet, I found that the majority of recipes for mint pesto were for lamb, chicken, pork, or on pasta, but there were a few recipes for mint pesto made to be served on fruit or in baking.

The recipe for brownies that I chose called for the mint pesto to be made with sugar and honey. This recipe also recommended mint pesto for a summertime treat poured over ice cream. It's a big hint to tell Seth that the secret ingredient can be used for pork, lamb, chicken, or over pasta but the better part of the brownie dessert will be in the tasting rather than the guessing.
4. I am cooking eggs, lemon juice, sugar, and butter on my stove top. As I stir this mixture, I am thinking how good this Lemon Curd will be with homemade muffins for my annual Christmas Brunch. I know of milk curd and cheese curds, but there is a vegetable that has curds. Which vegetable has a part of it called curds?

Answer: Cauliflower

The flower buds of the cauliflower are called curds. My children liked it better when I said, please eat your pretty flowers, rather than please eat your curds. They knew Little Miss Muffet ate curds and whey and it was not cauliflower. More commonly curd is known as the solid part of milk that is separated usually done by adding rennet to the fresh milk. Curds can be made from cow, goat, or sheep's milk.
5. My son-in-law was in University when the, "who could eat the hottest pepper or use the hottest hot sauce", was a fad followed by many students. Aha, I know I shall make him Hot Salsa, jar it, and add it to his Christmas stocking. By the Scoville Scale which is the hottest variety of pepper I could choose?

Answer: Trinidad Moruga Scorpion

Handle with care! The Trinidad Moruga Scorpion pepper has been said to be the hottest pepper in the world measured by the Scoville Scale. Capsaicin is the alkaloid found in peppers which gives them their heat. The Hot Salsa recipe I am using calls for a Habanera Chili pepper which comes from the Yucatan Peninsula and measures 100,000 to 300,000 heat units on the Scoville Scale.

This Habanera pepper sounds sufficiently hot enough for my son-in-law.
6. It can be very cold during Christmas week in Pennsylvania and the neighbors are getting together to go out Christmas caroling. I have invited the caroling group to my house afterwards. I shall have a Wassail bowl filled with hot cider for them to drink. What is a wassail?

Answer: A toast to one's health especially during the Christmas season

A Wassail is a toast to one's health given when offered a drink of some kind usually during the Christmas season. The drink is commonly made of hot mulled cider. In England, during the Middle Ages, the peasants would gather together to visit the lord of the manor to wish him well and to sing Christmas carols. The lord usually responded to the carolers by rewarding them with treats of some kind.

In time, this tradition became associated with the Wassail Bowl. This drink is usually served in large goblets.

As I offer my neighbors a cup of hot cider from my Wassail Bowl, I will toast them with the words, "Love and joy will come to you, and to your wassail too....".
7. Our parish church is asking for food donations as well as children's gifts to deliver to needy families for Christmas. I have decided to make a number of loaves of Molasses Bread. The recipe is lactose free and nutritionally healthy, yet sweet and tasty for adults as well as for kids. What type of liquid does the recipe call for to make my Molasses Bread a healthy non-dairy product?

Answer: Soy Milk

The Molasses Bread recipe calls for soy milk for a lactose free loaf. It is relatively simple and inexpensive to make so I shall make ten loaves of it to donate to the parish charity. Soy milk is cholesterol free, low in saturated fat and high in protein. Molasses is a good source of the minerals iron, calcium, copper, and manganese.

A healthy Christmas treat for all! This bread, covered in plastic wrap tied with red or green ribbons will stay fresh for a goodly period of time.
8. It is time to make my grocery list for our family's traditional Christmas Dinner. We shall have a Standing Prime Rib Roast of Beef and Yorkshire Pudding. From my butcher, I learned that there are generally three categories of beef and about forty-eight cuts of it. What are the three general categories of beef?

Answer: Ground beef, steaks and roasts

Ground beef, steaks and roasts are the three general categories of beef. I shall purchase a Rolled Rib Roast of Beef. A Standing Rib Roast usually has seven ribs and can weigh sixteen pounds or more. I will have the butcher remove the ribs and use them as a rack for my roast when I put it into the oven.

This roast is a tender cut of beef and is fairly expensive. However I did not try to buy a Kobe beef roast which can cost upwards to three hundred dollars per pound in the United States. The Yorkshire Pudding, if it turns out perfectly, is really the family favorite of this Christmas dinner.
9. Early in December the usual invitation to come to a Christmas Cookie Exchange arrives. I shall make my Caramel Cream cookies for this event. In addition to bringing cookies, what else helps to make a successful Cookie Exchange gathering?

Answer: Bring a copy of the cookie recipe

There does not seem to be an original date nor a person responsible for developing the idea of a Cookie Exchange. My first experience of attending a Cookie Exchange was in the mid 1970s. Cookie Exchanges can be hosted by relatives, friends, neighbors, Women's Clubs, or church groups.

This event calls for the guests to divide up their cookies so that there are some for the table and some for the guests to take home. Their recipe cards are placed by the tray of their cookies. The Hostess usually has Christmas decorations up and plays Christmas music.

When the party is about to end, the guests take their provided plastic bags and go around the table with the diverse cookies made brought to the Cookie Exchange.
10. Before Christmas, I shall have a holiday dinner party and invite three close couple friends. Our group enjoys cocktails before dinner. Since we have one friend who is pregnant, I shall make her a non-alcoholic drink but still one that looks as festive as a Christmas Cranberry Cocktail. Frequently referred to as a Shirley Temple (although that is actually a specific drink made with ginger ale), what is another name for a non-alcohol cocktail drink?

Answer: A Mocktail

My raspberry cooler recipe, although it calls for ginger beer ,contains no alcohol so this will be my mocktail served with cocktails. A mocktail is so named as it is an imitation of a cocktail. For guests who are pregnant, recovering alcoholics, or those adherent to their religious tenets plus those guests those who simply do not prefer alcoholic beverages, a mocktail is a fitting consideration of one's guests.

The Christmas Candy Cocktail calls for rimming the cocktail glass with smashed candy canes pieces and a miniature candy cane hung from the lip of the glass.

The candy canes will look holiday-like hung from my raspberry cooler mocktails as well.
