Answer: Almost five hundred

Most of the ships were escorts and corvettes that were being hurried to completion but there were also two Imperial-class Star Destroyers being put together.

2. What was the name of the YT-1500 freighter that docked at the Nova station while Han and Leia were wainting for the Errant Venture?

Answer: Asteroid Dancer

The names of ships that docked at the station - like Asteroid Dancer and Light Racer - were announced in the Big Boom cantina by means of a hologram above the heads of Bobolo Baker's All-Bith Band.
