    		The art of trimming shrubs and trees into geometric forms, animals and other shapes is known as topiary.

    		Just as an aside, it's interesting to note the etymology of the word topiary. It's a Latin derivative for a landscape gardener (topiarius) who is a designer of topia (places).

    There are some fantastic examples of some elephants at the Royal Palace at Bang Pa-In in Thailand.
