Star Wars Species
Yuuzhan Vong. Yuuzhan Vong came into "the galaxy" under the command of their gods. They despise machines and all their equipment (weapons, ships, armor) is "living". They take great pleasure in pain and death. You can read about the Yuuzhan Vong and their invasion in the 19 book (plus 2 e-books) series: "The New Jedi Order".
Gungan. Gungans live peacefully with the Naboo (the human population on Naboo) and stay in their underwater cities most of the time. Ummm, not too much more to tell, just watch "The Phantom Menace".
Jawa. Jawas are cloaked figures who travel in large sandcrawlers looking for junk amongst the vast deserts. They have to be careful to stay away from Tusken Raiders and Krayt Dragons, for they will slaughter Jawas for the sake of water and entertainment.
Quarren. Quarren live on the planet Mon Calamari along with another species with the same name (Mon Calamari). Quarren like to stay on their home world as opposed to their cousins who like to create starships and fly them across the galaxy.
Dug. Dugs come from Malastare, which they share with the Gran. Dugs will fight/beat up someone just for the sake of doing so. The most famous Dug is Sebulba, the winner of every pod race (until Anakin Skywalker came along) and the largest cheater of all time (he used a flame-thrower when pod-racing, which isn't allowed).
Wookies. "That's because droids won't rip your arms out of their sockets when they lose, wookies are known to do that" is what Han told C-3PO when he was helping R2-D2 in a game against Chewbacca. Wookies come from Kashyyyk, a world with large trees and a dark and deadly under world.

Bothan. Bothans come from Bothawui. The political masterminds are power hungry and are good at espionage. 24 bothans died in the capture of the Second Death Star's plans.
Rodians. Rodians come from the planet Rodia. Rodians were hunters who hunted a lot. When the species that they hunted became extinct, they turned on each other. To stop the massive slaughter, they created drama. Many complex stories were made and are regarded highly by the rest of the galaxy.
A Hutt. Hutts are hermaphrodites and live a long time. The hutts have large egos because when they still lived on Varl, they worshipped the gods Evona and Ardos (the two suns). Evona slid into a black hole, setting off a chain reaction, destroying most of the planets, turning them into asteroids. Ardos, soon after, turned into a white dwarf. Because the hutts survived this, they thought themselves as greater than the gods.

Twi-Leks. The head tails are called lekku, and individually called "tchin" (right) and "tchun" (left). They come from the planet Ryloth, and live in cities carved into the mountainside.
Croke. Rokur Gepta was the last Sorceror of Tund as, after learning all of the tricks of the group, he eliminated them all.
Firrerreo. Hethrir destroyed his own planet and with it almost all of his species, to prove himself to Darth Vader.
Gran. Ask Aak was the senator for Malastare in the final years of the Old Republic.
Gen'Dai. Gen'Dai had amazing regenerative properties and could live for an extraordinary length of time. Durge was unusually aggressive for his species.
Devonarian. Vilmarh Grahrk, commonly known as 'Villie', was a nefarious character who had frequent run-ins with the Jedi Quinlan Vos.
Falleen. Thann Mithric was part of Jaina Solo's team on Corellia during 'Legacy of the Force: Betrayal'.

Mon Calamari. Jesmin Ackbar was the niece of Admiral Ackbar and was a member of Wraith Squadron until her death.
Anzat. Derrik Jerriko was in the Mos Eisley casino during the meeting between Han Solo and Luke Skywalker in Episode IV, and desired to consume Han Solo's 'soup'.
Ewok. Kettch was a supposed member of the Hawkbat pirates created initially by Wes Janson and was a tool used in a number of pranks engineered by Wraith squadron members, leading to Wedge Antilles having to wear an Ewok puppet while flying in a stolen TIE fighter.
Duros . Neimodians were leaders of the Trade Federation during the Clone Wars, and some like Jaina Solo's Twin Suns wingmate Vale were mistaken for Duros.
Human. An easy one to finish. Humans could be found in every level of Galactic Society in millions of colonies worldwide.
Chiss. A Chiss' full name was difficult to pronounce, so a Chiss would use his core name around close friends and also to assist in relations with non-Chiss. An example was Mitth'raw'nuruodo, whose core name was Thrawn.
Mon Calamari. All these species lived on the planet of Mon Calamari which was known as Dac in the native language of the Mon Calamari species and the Quarren. The planet was entirely oceanic. For much of their existence the Mon Calamari lived nearer to the surface of the ocean while the Quarren lived in the depths.
Detecting the emotional state of others. The Tendrils also assisted in a Nautolan's olfactory and pheromone sensing skills.
Massassi. The Massassi looked similar to members of the Sith Species in that they were red-skinned humanoids with tentacled beards. The Massassi were generally more muscular, larger and more aggressive than an ordinary Sith which made them ideal for warfare.
The Massassi made up the majority of the Sith Army in Naga Sadow's invasion of the Republic which commenced the Great Hyperspace War. After the War, Sadow performed Sith Alchemy on the Massassi which transformed them into primitive savages.
About 1,000 years later Exar Kun enslaved the Massassi to construct a series of temples for him on Yavin 4. Kun almost extincted the Massassi when he drained the life force out of all the Massassi on Yavin so that he could keep his soul alive. At the time of the movies, the Massassi were likely to be extinct.
The Kissai were the Priest caste of the Sith while the Hssiss and the Terentatek were both creatures that were created out of Sith Alchemy.
Wookiee. When Wookies are about 12, they go through this coming of age ceremony where they learn to survive in the Shadowlands of Kashyyk through techniques such as avoiding predators, making shelter and traps, what were the edible animals and so on. Chewbacca took Lumpwarrump on one.
Manaan. Manaan is home to the Selktath species. The Selkath young required water to survive but when they matured they were capable of breathing air. The Selkath were a bipedal species with a head similar to a manta-ray and blue-greenish mottled skin.
Ithorian. Ithorians had a long curving neck and a slightly t-shaped head as well as two mouths and four throats. They did really look like hammerheads.
Cathar. During a Blood Hunt, Cathar warriors would engage in single combat against entire nests of Kiltik. This was done to gain honor and purge themselves of inner darkness.
Gotal. Antarian was a language also known as Gotal that was spoken by the Gotal natives on the moons of Antar.
Montral. These Montrals allowed the Torgruta to possess a form of echolocation by assisting in sensing the distance and movement of objects around them.
Lekku are the names of the twin tendrils of a Twi'lek. Haillu referred to the earlobes of the Gungans, while the Lethorns were the horns which grew out the side of a Chagrian's head.
