Quiz Answer Key and Fun Facts
1. Where is the world's largest supply of caviar?

Answer: Caspian Sea

Bordered by Russia, Kazakhstan, Turkmenistan, Azerbaijan, and Iran and fed by more than 100 rivers, the Caspian is the largest inland body of water on Earth. The Black Sea is the second leading source.
2. What is the Russian word for caviar?

Answer: Ikra

Although caviar might be something very Russian, the word caviar is not. "Caviar" first came into English in the 16th century, probably by way of the French and Italian, who borrowed it from the Turkish "havyar".
3. The European Union, Switzerland, the United States, and Japan account for how much of the world's IMPORT of caviar?

Answer: 95 percent

Russia accounts for a huge percentage of the world's CONSUMPTION of it, but of course, they don't have to import it. The United States accounts for about 1/3 of the world's total caviar imports... an average of 130,000 pounds of caviar per year, worth about 6.6 million dollars.
4. From which fish does red caviar come?

Answer: Salmon

Sturgeon give us BLACK caviar.
5. Some species of sturgeon can live for how many years?

Answer: Over 100 years

Some species live to be more than 100 years old and can grow up to 2,500 pounds and 15 feet long.
6. The ILLEGAL catch of sturgeon ... poaching about ten times the LEGAL catch ... most often occurs where?

Answer: The Volga River

While Russia has to always be on guard for poaching by its neighbours, the majority of poaching is done by Russians themselves, feeding a large network of blackmarket caviar.
7. Which of these is NOT a species of sturgeon?

Answer: Sturgeon Generale

Beluga sturgeon, of course, produces Beluga caviar. Russian sturgeon produces osetra (or ocetra) caviar, and stellate sturgeon gives us sevruga caviar.
8. Russian President Vladimir Putin made a joke about caviar at a state dinner. Everyone laughed except one person, who thought Putin was being serious. Who was that person?

Answer: George W. Bush

Putin explained to Bush how Russia produces caviar. They catch the sturgeon, open up the fish, carefully remove the eggs, close the fish and throw it back into the water. Everyone at the table is laughing .. except Bush who said, "I believe you Mr President." Everyone laughed even harder.
9. What is the Russian word for the best grade of caviar?

Answer: Malossol

Translated, it means "lightly salted".
10. If someone in Russia told you he was a "brakaneer", what would he do for a living?

Answer: Sturgeon poacher

Unlike the English word "poacher", the Russian "brakaneer" has the connotation of an established profession.
11. Thanks to years of over-catching, pollution, and neglect, the Caspian sturgeon numbers are rapidly declining. Where is the world's SECOND largest source of black caviar expected to come from?

Answer: California

It was a common food in California during the gold rush days, until overharvesting led to the decline of sturgeon and its eventual protection. California fish farmers have now developed a way to farm sturgeon.
12. How many calories are there in an ounce of caviar?

Answer: 70

There are slightly less (55 per ounce) in ED (salmon) caviar if you are diet-conscious.
13. Of all your USDA daily requirements, caviar is highest in what?

Answer: Iron

10.6 percent of your daily iron requirement, 4.4 percent of your calcium, 0.1 percent of your niacin needs ... and no zinc.
14. Though it produces only a very small percentage of the world's supply, which little-known fish also gives us BLACK caviar?

Answer: Paddlefish

Indigenous to the Caspian, it is more often caught by Iranian fishermen than their Russian counterparts.
15. You're eating caviar, spread on blinis. What are they?

Answer: Pancakes
