Answer: France

Sole meuničre can be prepared with the whole fish (grey skin removed) or with just the fillets. Traditionally, the fish is sautéed whole, then deboned and plated by the chef at the table.

This particular dish is the one that made Julia Child fall in love with French cuisine. In her memoir, she called it "the most exciting meal of my life."
2. Aji Furai (Horse mackerel deep-fried in bread crumbs)

Answer: Japan

Japanese horse mackerel, also known as Japanese jack mackerel or Japanese scad, is a commonly used fish in Japanese cuisine. The fish can be found around the coast of all of the islands of Japan, with the exception of Okinawa.

The name 'aji furai' is quite straightforward. 'Aji' is the Japanese name for horse mackerel, and 'furai' means fried seafood.
3. Bolinhos de Bacalhau (Deep-fried codfish fritters)

A dish that can be found in both Portugal and Brazil, it is a deep-fried mixture of potatoes, bacalhau (codfish), eggs, parsley, onion and sometimes a hint of nutmeg. They are also called salt cod fritters or salt cod croquettes.

Amritsari macchi is a deep-fried fish fritter from the Punjabi region of India. The best choice of fish for this dish is sole or singara, although others can and have been used. After marinating in its freshly ground spices (like garam masala, crushed dhanya seeds, ajwain, red chilli powder, lemon juice, chopped green chilli and salt) it is coated in a besan batter and deep-fried.

Dating back to the mid-19th century, Beer battered fish and chips are a British staple - to the point that the combination was exempt from rationing during World War II! And while the classic recipe for batter is simply made up of flour, salt, water and salt, and pepper, the popular substitution of water for beer adds flavour to the fish and makes the batter light and crispy. Cod and haddock are the traditional fish choice, but many white fish varieties are common (plaice, halibut, flounder, tilapia, pollock, whiting or catfish).

It's a little more complicated than that, but it captures the essence.

Whitebait are small fish that are eaten whole (like sardines or anchovies). In New Zealand, the whitebait typically used for whitebait fritters is the common galaxias or inanga. As a seasonal delicacy with restricted fishing, it can demand high prices.

The whitebait is combined with egg whites (so as not to drown out the flavour of the fish) and salt and pepper, and you end up with what is essentially a fish omelette.
8. Chicharrón de Pescado con Ají de Mango (Deep-fried fish fritters with mango sauce)

Answer: Colombia

'Chicharrón' is usually made from fried pork rind, but varieties exist with chicken, beef and fish (pescado). Chicharrón de Pescado as a dish is not limited to Colombia, and varieties can be found throughout Latin America.

Chicharrón de Pescado con Ají de Mango is a variety specific to Colombia, where the fish used is traditionally Pirarucú (a white fish from the Amazon river) and then seasoned with lime juice and salt before being battered with cassava flour, salt and pepper. After deep-frying to a crispy golden-brown, it is served with a mango dipping sauce.
9. Boulettes de Poisson (Fried fish balls in tomato sauce)

Answer: Senegal

Any white fish (cod, hake, perch, tilapia all work well) can be used for this Senegalese dish. The fish is breaded using bread crumbs (and some seasonings) in golf-ball sized chunks and deep fried. The tomato sauce is typically spicy, and everything is commonly served with a rice and vegetable dish called 'ceebu jen'.
10. Fritto Misto de Mare (Mixed fried fish and seafood)

Answer: Italy

Traditionally, fritto misto de mare is a mixture of medium-sized whole fish (such as cod, mullet, or sturgeon), small fish (typically anchovies), and other seafood (calamari and shrimps). Dredge with semolina flour and deep-fry to a golden brown, then serve with a wedge of lemon!
