Answer: Nevermore

The "ominous" bird's answer to every question. Presumably Poe's most famous poem, published in 1845.
2. "The Raven" has 18 stanzas. How many of them do NOT end with this famous word?

Answer: 7

The first seven stanzas all end with "nothing more", except for the second one ("for evermore").
3. From which poem is this quote: "How SHALL the ritual, then, be read? - the requiem how be sung - By you - by yours, the evil eye, - by yours, the slanderous tongue - That did to death the innocence that died and died so young?"?

Answer: Lenore

"Ah, broken is the golden bowl! the spirit flown forever!" A very famous beginning. Poe wrote the first version of "Lenore" in 1831, by then it was called "A Paean". A later version is from 1843, and the final version was published in 1845.

Frances Sargent Osgood is the lady from "A Valentine". I made up the name Helen Dinah George, though there is a poem called "To Helen". This Helen's death also inspired Poe to write "Lenore".
