I tasted this salad while a guest of my friend's family on a trip to Thailand. We sat on their verandah floor, surrounded by a bewildering array of dishes. I returned to one dish which intrigued me with its tiny red and white round and oval balls gleaming among the green of coriander and mint. I had thought the red balls were pomegranate (or similar) seeds.

It wasn't till I had taken a second helping that my friend told me the dish contained both the eggs and the mature bodies of red ants. I thought about it for a moment, then decided that as I had enjoyed it first time around, I wasn't going to let Western sensibilities get in the way, and continued to eat.

It was in fact very tasty.

Created by Oscar Tschirky, the maitre d'hotel at the Waldorf-Astoria Hotel in New York, the Waldorf salad is considered an all time classic. There are some acceptable modern spins on the original, but here are the ingredients for the classic version: Granny Smith (or similar) apples, lemon juice, celery, mayonnaise, walnuts (raisins are optional).
