Quiz Answer Key and Fun Facts
1. What are "Ableskiver" known in the U.S.?

Answer: Pancake Puffs

Ableskiver can be a sweet or savory dessert. It can also be served just for breakfast or for coffeetime. Ableskiver pans can now be found easily, and are needed to perfect these desserts. Apples can usually be found inside the ball, and sprinkled with powdered sugar. No one is sure who invented these tasty desserts.
2. What Danish cookies are actually fried?

Answer: Kleiner

Kleiner are made with a somewhat thick dough and deep-fried. They are cut fairly thinly and tied into a half-knot. They are usually cooked for Thanksgiving in the US in Danish origin homes.
3. What special spice is used in Danish Coffee Cake?

Answer: Cardamom

Cardamom, which comes from a ginger-like plant, is extremely aromatic. Cardamom is very popular in all Scandinavian baking. There are several different cake recipes using this favorite spice.
4. Do you usually bake Krammerhuse in the summer?

Answer: No

Krammerhuse are Danish cones. An extremely light batter is used to make these delicate sweets. A special pan, usually called a Krummekage pan, is needed and sometimes this pan can be found with a pretty design. These cones are best made in the Spring, specifically around Eastertime or a little after. Strawberries are best with these cones, as well as homemade sweetened whipped cream!
5. Is Kringler a bread?

Answer: No

Kringle is a bread. Kringler is a cookie. Both are shaped like a pretzel, and can found glittering with sugar. It's worth the effort to bake these cookies, which can be very difficult to perfect.
6. What pudding-like dessert is made by stewing fresh berries?

Answer: Rodgrod

Rodgrod is a Danish Berry Pudding, made in the summertime to cool the palette. It's surprisingly fresh and easy to make from either scratch, or the instant mix found in specialty shops.
7. What holiday are Jodekager baked for?

Answer: Christmas

Jodekager are great cookies to bake with young children. The kids get to decorate with different colored sugar and other goodies. These cookies are round and crisp. Christmas is the best time to bake these and to get the family together.
8. Is Apple Cake the same as Aeblekage?

Answer: No

Aeblekage, which translates as Apple Charlotte, is similar to an apple pie with a meringue. Apple cake, a tradition in my family, consists of toasted-bread crumb bottom and a souped up applesauce with whipped cream on top. Both are traditionally made for joyous occassions.
9. What ingredient is used on the top of Pariser Kranse?

Answer: Coconut

An eggwhite-sugar concoction is smothered on top of the cookie, with the coconut placed atop to keep it in place throughout the baking process. These cookies can be made all year long.
10. What do the Danish call what North America knows as a Danish Pastry?

Answer: Viennabrod (Wienerbrod)

Can you believe it? The Danish think of this as coming from Vienna. L.C. Klitteng and Herman Gertner can be thanked for bringing these pastries to the U.S.(www.wikipedia.org), and americanizing 'wienerbrod' to just 'danish'. If you go to Denmark, you can find many different kinds of these pastries.
