Quiz Answer Key and Fun Facts
1. The Sultan of Sultrivia is really going to like the drink I am going to make for him. Created with fermented wheat, sugar and water, then served with cinnamon, do you know what Turkish drink is going to please him?

Answer: boza

Also called bosa, the drink is popular in several countries. In Turkey, the malt beverage is made from fermented wheat, while elsewhere it can be made from corn or millet. Rather low in alcohol content, the beverage is actually a nourishing drink - high in vitamins and good for the digestive system.
2. To please the Sultan of Sultrivia, I am going to make a Moroccan staple called warka. While they are now available pre-made in stores, the homemade version is my preference, despite the fact that it is quite time consuming. But, do you know - is warka is a type of pancake?

Answer: yes

The large, very thin pancake called warka is used to make pastillas - large meat pies that traditionally contained squab, but can be made with other meats. The making of warka is a highly skilled operation, which involves several steps. A dough is made from hard-wheat flour, salt and warm water, then kneaded to a spongy elasticity.

After a rest, covered with a film of warm water, it is divided into pieces the size of eggs and each piece is dabbed repeatedly onto a an oiled tray over hot coals.

As the dough touches the tray, a very thin film of pastry is built up, and eventually forms a delicate pancake or crepe. In a pinch, phyllo dough can be substituted for recipes which call for warka.
3. The Sultan of Sultrivia is going to be truly impressed with my next creation. I am making tiny meat-filled pies that will be baked, then cooked in a yogurt sauce. Do you know what these Lebanese delights are called?

Answer: shish barak

Traditional shish barak (shishbarak) are very small tortellini-like pies. The pastry usually used - rakakat - is softer and more pliable than phyllo dough, but phyllo dough or wonton wrappers are acceptable alternatives. The dish is usually served with rice and/or bread.
Fatteh is a dish which uses a flatbread foundation for an assortment of toppings. Sayyadieh is a fish and rice dish. And, musakhan is a chicken pie with onions, sumac and fried pine nuts.
4. I think the Sultan of Sultrivia will really enjoy the labneh I am making. Its particularly luxuriant taste and texture has made it a favorite on the Arab table. Do you know what yummy dish I am preparing for the sultan?

Answer: yogurt cheese

Labneh is simply yogurt drained of its whey. The resultant yogurt cheese is almost decadent. Depending on the amount of time you allow the yogurt to drain, you can have a yogurt cheese that is perfect for dipping or spreading, or a much stiffer product that can be shaped or molded. It can be served plain, spices can be added, or even jam swirled in for a breakfast spread.
5. I think I will delight the Sultan of Sultrivia with a dish that is quite popular in Iraq. I will need rice, egg and spices to make the dough, then minced meat, chopped onion, sliced almonds, spices and sultanas for the filling. Do you know what treat the Sultan will be enjoying?

Answer: Kubbat Halab

Kubbat Halab is a type of kibbeh (kibby), consisting of a rice-based crust and a stuffing of minced meat, onions and spices. The Kubbat Mosul is similar, but the crust is made with bulgur. The kibbeh is a popular dish throughout the Middle East - and in Latin America.
Bamia is a tomato stew with baby okra and lamb. Kouzi is a whole lamb baked over rice. Masguf (Masgouf) is a grilled fish dish which is usually served with a crispy flatbread.
6. What a treat the Sultan of Sultrivia is in for! I am making a soup that is popular in Cyprus and Greece. Although there can be some differences in ingredients, my recipe calls for Lima beans, tomatoes, celery, carrots, spices and olive oil. Do you recognize the name of this dish?

Answer: fasolada

While recipes vary widely as far as ingredients are concerned, fasolada is basically a vegetarian bean soup. Popular year-round in Greece, it is widely consumed during Lent, and is often served with feta cheese, olives and bread.
Sabich is a sandwich of pita bread, fried aubergine and hard boiled eggs. Fesenjān is a stew made with pomegranate juice, walnuts and some type of meat - usually poultry. Gheimeh is basically a split pea stew made with cubed lamb and served with rice.
7. A true feast awaits the Sultan of Sultrivia tonight! I am making Mansaf, a main course that includes lamb, rice, flatbread and spices - and is topped with fried pine nuts and almonds. Do you know what country's national dish I am making?

Answer: Jordan

Mansaf's main ingredient is lamb seasoned with aromatic herbs and spices, which is cooked in jameed - a dried yogurt. The dish consists of a base of flatbread topped with a bit of the jameed broth, a large quantity of rice, the cooked lamb, pine nuts and almonds, and lastly the rest of the broth. Mansaf means 'large tray', which is how the dish is traditionally served.
8. The Sultan of Sultrivia is sure to savor the kabsa I am whipping up! Very popular in Saudi Arabia, kabsa recipes usually call for spices, meat, vegetables - and always, which grain?

Answer: rice

Kabsa is an assortment of rice dishes which are usually made with basmati rice, meat or poultry, spices and vegetables. A national dish of Saudi Arabia, it is also common in Yemen and other Gulf States - where it is called machbus (machboos). Different additions to the basic recipe include raisins, dried limes, pine nuts and tomato sauce.

The dish may be served with bread, yogurt or salad.
9. I have had to make use a substitute for the main ingredient in my next dish, but I am sure the Sultan of Sultrivia will not mind. I am making a Moroccan dish called pastilla, which is a very complex dish, a meat pie which is both salty and sweet. But, the traditional recipe calls for the ingredient I had trouble obtaining. Do you know what meat I was unable to find?

Answer: squab

Pastilla traditionally contained squab, but nowadays chicken is often used instead. There are also recipes for a filling made of fish or organ meats. The dish is a complex mixture of tastes and textures, and a simple glance at the finished product's crust of cinnamon, sugar and ground nuts might lead one to believe it is a dessert. But, the cardamom, cinnamon, turmeric, ginger and other spices, the onion and custard-like meat filling, all baked inside warka or phyllo dough, makes this dish a truly unique main course. A smaller version is called briwat, and is made in an assortment of shapes, then deep fried.
10. While the Sultan of Sultrivia doesn't need to be sweetened up, I am going to make him a special treat - cookies. I am making Kleichas, which often have a date filling, or date and walnut filling. These sweets are considered one of the most popular cookies of which country?

Answer: Iraq

Kleichas are considered the national cookie of Iraq. Usually scented with cardamom, and made with rose water, kleichas can be made in different shapes and have different fillings. A date filling is traditional, but there are variations which include a mixture of walnuts and sugar, coconut and sugar, and dates and sesame seeds. They go well with tea or coffee.
