These opening scenes provide a chance to flashback to the opening scene of the entire series. It also shows us that Annie and Eric are still truly in love, as Annie tells Rose's mother later on.

Answer: "I'm sure she'll be there in spirit."

Eric's mother, Ruth, is alive, but she won't be coming according to the previous episode. She lives in New York, so it would be more convenient to stay there for Matt's graduation. After discussing Annie's mom, Jenny, who was established to be dying of leukemia in the first episode ever, Eric and Annie discuss how they can't decide if they want Simon and Rose to get married or not. "It's not that I feel one way or the other," Annie says, "it's that I feel one way, then the other!"

Answer: Like they'd just met

Rose says that she guesses that's good. Rose met Simon sometime over the summer between seasons 9 and 10 of "7th Heaven", so they've known each other for less than a year. Then Rose goes on to give Simon "her news".

Answer: I'm late

He thinks she means that she's late for where she's going. So Simon tells Rose to hurry up and say it then, if she's late. But that's the news... and although the following scene is a bunch of looks of dawning comprehension and vague "Oh, you mean -" sentences, it becomes understood that Rose's period hasn't come yet, even though it usually should.

This means Rose might be pregnant. She doesn't want to find out with a pregnancy test yet, though. She'd rather wait a week.

Answer: "Help me today, and tomorrow, and every day after that"

Simon says God's always helped him. And Simon says he needs help now, because he thinks he's gotten himself into something he can't handle. Maybe all grooms feel that way, he doesn't know.

Answer: a boy

But Lucy says that Kevin doesn't know that. Kevin's apparently told the entire Camden family they're having a boy! When Lucy attempts to question his "intuition" further, she asks if Simon's going to go through with the wedding. Kevin says he is. When Lucy asks about Rose, the reply is the same. Later on, Kevin and Lucy find out the sex of their baby... but the viewers and the Camdens both aren't going to find out until after the wedding.

It most likely is more than just the sex of the baby, because it's a "big secret".

Answer: Cramps

Kevin turns right back out the door at hearing this. Lucy explains that when it comes to Ruthie's personal health, he's more than a bit squeamish.

Answer: The story of when Lucy first got her period

After Kevin asks, "You weren't like that when you were her age, were you?", Lucy responds that she was never like that. She asks if she'd ever told Kevin the story of when she first got her period, and Kevin said no. He thinks he managed to avoid that one, but Lucy insists on telling him in the car on the way there.

Answer: Rose would be more comfortable if Sandy and Aaron weren't sharing the spotlight

Ruthie continues to say that Rose is really jealous. Rose wants a baby, and Ruthie bets she'll get pregnant right away. Eric hopes not, as Simon has two more years of college and is thinking about law school. But Ruthie says that all Simon is doing is thinking... he's taking two incompletes this year, after all.

Answer: become pregnant

Ruthie is telling Eric that Rose forced herself to become nice so that the family would like her, and Ruthie could see Rose getting pregnant just to make sure Simon marries her! Eric responds by saying, "I really hope this is just the cramps talking."
