A "guignolo" is a cocktail made from guignolet which is from a cherry called guigne, as well as both sour and black cherries. Mixed with champagne and cherry juice it has somewhat of a sweet whiskey taste. Sante!

"Rindfleischrouladen" is a braised beef roll that is stuffed with chopped vegetables and sometimes ground chicken, but always with dill pickle slices. "Spatzle" is a dumpling, that has been pushed through the holes in a colander or Spatzle maker, making them look something like cooked macaroni. "Tomatensalat" is a tomato salad, prepared as the house does theirs. Of course, "Bier" is the libation of choice, beer. Prost!

"Paella" is a rice dish that can be made with many different ingredients, but rice is a necessary ingredient for all forms. The usual rice is "bomba", one that looks somewhat like big Bs. The additions may be green vegetables, garlic and saffron, meat, fish, and in some recipes, beans.

It's a delightful melange. The "Anis", again a digestive, is an anise-flavored liquor, somewhat like drinking melted licorice.

"Insalata di frutti di mare" is seafood salad, with garnishments. It is very healthy for one who has been overeating for a few days. "Amaretti" is a almond flavored macaroon which we will enjoy with our "caffe", which is coffee.

"Szekely Gulyas" is the most well-known dish of Hungary, as well it should be. In this form it is like a stew, rather than the soup form of "gulyasleves". "Uborkasalataval" is a refreshing cucumber salad. Our digestif will be "Palinka" a double-distilled fruit brandy. Egeszsegedre! A wonderful mix of heavy and light.

"Hunkar Begendi", meaning "Sultan's Delight", is a dish of grilled, pureed, eggplant, topped with cashar cheese, and covered with cubed lamb pieces. "Yesil salata" is a salad of greens. "Cay" is tea, which is a wonderful ending to this meal.

"Prinjolata u te" is Prinjolata, a cake that is enough to make dessert lovers swoon, with a cup of tea. The recipe is basically a sponge cake, drizzled with whiskey, into which are put pine nuts, glazed cherries, chocolate chips, all bound with a milk, sugar, butter mixture.

Then, all of that is then mounded on a plate and iced with whipped cream with vermouth and then decorated with more pine nuts, glazed cherries and, for the crowning touch, drizzled with melted chocolate.

"Feijoada" is Brazil's national dish, and I know why. It's an absolutely marvelous stew made with black beans, pork and beef. It's often served with "arroz", which is rice and "couve" which is collard greens as well as "profunda banana frita", a deep fried banana. We are now well fortified to take on the sightseeing we've mapped out.

We are going to have the specialty - or one of them - of Oaxaca, "mole de pollo y arroz" otherwise known as chicken mole with rice. We're augmenting that with "rodajas de pepino" which is simply sliced cucumbers. There is a story about some nuns who learned that the Archbishop was coming to visit, and got into a terrible state because they had nothing to serve him. An angel came to help them out, and they mixed day-old bread, different types of chilis, nuts, spices, a bit of chocolate and roughly 20 other ingredients, and simmered that concoction for hours.

In the meantime, they killed the only meat they had (an old stringy turkey) and cooked it for quite a while, then topped the meat with the thickened, dark, sauce. Apparently, the Archbishop enjoyed the meal very much.
