In the episode 'Fool For Love' we see a flashback to before Spike was sired and his friends called him William they then called him William the Bloody after his 'bloody awful poetry'.

To clear up the confusion about who sired Spike.. in 'The Watcher's Guide Volume One' it says that Spike was sired by Drusilla, the guide came out in 1998, before the episode 'Fool For Love' (showing Dru siring Spike) aired on Nov. 14, 2000. Angel sired Dru and Dru sired Spike so calling Angel his sire would be technically true.
