1. Which piece of pastry must be the easiest?

Answer: cake

This question was a piece of cake!
In the antebellum 19th century there was a Southern black custom of mocking the stiff ballroom dances of the whites by exaggerating all movements into the grotesque. Probably not knowing this, whites actually liked these dances and held "dance" contests for Blacks (mostly slaves of course) where the prize was traditionally: a cake! Cakewalk contests were hugely popular during the later 19th century. The moves of a cakewalk are not particularly easy, but it was something done on weekends, in a leisurely way, and therefore received the meaning "being easy".
2. What was "Easy" for Dennis Hopper and Peter Fonda when they were "Born to Be Wild"?

Answer: Rider

'Easy Rider': THE classic road movie. Driving a tricycle is easy-peasy. A hog is a slang term for a cool motorcycle in general, for a Harley-Davidson in particular. The slang term "easy rider" has had many meanings over the years (check the interesting Wikipedia entry). Mostly because of this movie it is now the term for a certain type of motorcycle as shown in the movie, or more precise... a Harley-Davidson!
3. What wind is easy?

Answer: breeze

Breezing through the quiz are you?
A light wind, 3 to 27 knots, or Beaufort scale 2 through 6. No explanation for the origin of the expression is given, but it seems obvious that sailing with a breeze is the best. Personally I don't set foot on a boat for my pleasure with less than 2 or more than 6 Beaufort.
Obviously, a sandstorm or tornado are not easy to endure. As for explaining beans... let's not.
4. Which Easy is Big?

Answer: New Orleans

So called because of the easygoing lifestyle in New Orleans, especially of jazz musicians.
This quiz was written only days after hurricane Katrina hit. It could well be that New Orleans will not be big nor easy again, but let's hope it will. The world would be less without it.
5. What is the easy way of eating out, according to the phrase?

Answer: picnic

Although if you have to deal with ants, rain, bears, dirt etc it's certainly no picnic. Again I could find no special origin for this expression except that it is used this way since 1886. I guess it's because all picnic food is already prepared, so you can eat without further ado. As with the cakewalk a picnic is also associated with leisure and weekend.
Regarding etymology: "picnic" comes from the French word "pique nique", meaning something like "picking a worthless thing" (translate this as "being idle").
6. How easy were the Commodores?

Answer: like Sunday morning

"I know it sounds funny but I just can't stand the pain

One of their biggest hits. Faith No More sang it too.
7. When it's easy, it's a cinch. What is a cinch?

Answer: The girdle that keeps the saddle on your horse

Obviously, when the saddle on your horse is firmly attached, riding it is a cinch.
8. Which rice crispy is easy?

Answer: Snap

For the cereally challenged: Rice Krispies are a well known breakfast cereal. According to Kellogg's marketing division they "snap, crackle and pop" when you put milk on it.
Officially, the expression is "it's a snap", not a crackle, nor a pop. Presumably something can be as easy as snapping your fingers.
Additional info: Harry Potter is a wizard, not a rice crispy.
9. Which of these is (the) easy?

Answer: European Commission

Just say it out loud: it's the EC! Silly wordplay I know :)
10. Which food is "overeasy" used for?

Answer: Eggs

It's when you want your fried egg easy (i.e. your yolk runny), but flipped OVER, so it's fried on two sides. This as opposed to "sunny side up".
The other three are dishes which can be served with a fried egg.
Crepes are very thin French pancakes. A 'crepe complete' is with egg, ham and cheese (yum). Leberkäse is German and translates as "liver cheese" (really, it's just liver and other unidentified meat products, no cheese). Nasi Goreng is Indonesian for "fried rice". It's excellent with sambal and krupuk.
