I think we will just call this creative license. They cant possibly explain to you how they know cause going through all that takes away from an action movie. Everything has to just keep going in an action movie or its ruined so they just know and that's it. I like to nit pick at movies too but in this case certain things are taken for granted. You can get an explination of how certain things are known in an action movie without it taking away from the pacing of said movie. All that would have to been done in this case, i.e "Die Hard", would have been for a simple line of dialogue to have been added either hinting at someone on the inside or someone saying they were the inside man. No need for a big scene explaining this. Of course there is the possibility that there was a scene explaining this that got cut from the movie, either during filming or in post production. Although we do get deleted scenes added to DVD/Blu-rays in this day and age, we still don't get every single deleted scene from a movie. Especially if the scene was in the script and the storyboard but deleted during the actual filming process. And in some cases where there is a novelization to a movie (don't know if that is the case with "Die Hard"), certain things may be revealed in the novelization that don't appear in the movie.
