Essentially, because salt is easy to get and can be used in the needed amounts in most dishes, and iodine efficiency is nasty (can cause goiters or lead to intellectual disabilities) . So by iodizing salt, you've got an easy and effective way to help prevent iodine deficiency, especially in areas where iodine is scarce in the foods available.
