They had no luck selling them as Bulls Testicles and changed the name to Rocky Mountain Oysters which, although a bit of a mouthful, sounded more appetising.

The culinary term for the testicles of male animals, in particular those of
lambs and sheep is animelles. This site suggests Animelles de Moutons Frites
is Rocky Mountain Oysters in French.
