Machop first becomes available for capture in Rock Tunnel. Poliwrath, who actually is a Fighting-type Pokémon as well as a Water-type Pokémon, cannot be caught in the wild, but it's pre-evolved forms Poliwag and Poliwhirl can, in various water areas.
