Answer: Crucio

This is the spell which uses the cruciatus curse, which is the torture curse. Harry tried to use it on Bellatrix Lestrange in the fifth book, but failed.
2. He Who Must Not Be Named stops. Now you want to disarm him so that he doesn't cast any other spell. What spell would you use?

Answer: Expelliarmus

This spell is often regarded as Harry's signature spell and disarms the opponent. It was used by Harry several times in the third book.
3. You succeed in disarming He Who Must Not Be Named! Now you want to freeze him. What spell would you use?

Answer: Petrificus Totalus

Using this you freeze like a stone. Hermione used it the first time in the series on Neville.
